How to Make a Microwave Southwest Scramble
I love cooking eggs for breakfast. However, my omelets end up being more scrambled than the fancy folded-over works of art served in restaurants. With that in mind, I’m usually looking for quick and creative scrambled eggs ideas. I was on the American Egg Board site and found this recipe for what I like to call a Microwave Southwest Scramble. It takes less than 10 minutes to prepare and only 2 minutes to cook.
Eggs contain zero carbs and no sugar. That means you can eat a well-rounded breakfast during the week without feeling round yourself. They are an inexpensive source of high quality protein and a source of Vitamin D.
Here’s the recipe!
Microwave Southwest Scramble
- 2 eggs
- 2 Tbsp. milk
- 2 Tbsp. cheddar cheese
- 1 ½ Tbsp. salsa
- Pinch each salt and pepper
Crack eggs into a bowl.
Add other ingredients.
Whisk ingredients together.
Spray a 12-ounce mug with cooking spray.
Pour ingredients into mug.
Microwave on high for 30 seconds, then stir.
Cook for another 70-80 seconds or until eggs have puffed up and are set.
