The Food Factor: Mediterranean Salad

Are you looking for a light entrée or a vegetarian side dish for a gathering of friends and family? Mediterranean Salad is an excellent choice.
It’s full of flavor and nutritious ingredients. Whole-grain rice and chickpeas provide high-fiber carbohydrates and protein that leave you feeling full.
It’s not only tasty, but quick and easy to make.
Mediterranean Salad
Ingredients
- 1 ½ C. dry brown rice
- ¼ C. olive oil
- 1 lemon, juiced
- 2 cloves garlic, minced
- 2 C. cherry tomatoes
- 1 C. olives, pitted and halved
- 1 C. chickpeas, drained
- ½ red onion, diced
- 3 tbsp. fresh parsley, chopped
- Salt and pepper to taste
Directions
- Cook rice according to package instructions and let cool.
- In a bowl, mix together olive oil, lemon juice, and garlic.
- In a separate bowl, mix the cooled brown rice and all other ingredients.
- Stir in the olive oil mixture.
- Refrigerate for at least 1 hour before serving.
Tips: If you’re using bottled lemon juice, start with 2 tablespoons and add more as desired.
